It is very helpful if all hot or cold food vendors fill out the temporary applications and submit them to the MOVHD Office by mail or email. It makes the inspection go quicker. You can pay the day of the event, but it is helpful to send the applications ahead of time. Only for-profit vendors need to pay the $72 fee.
